The glacial soil and temperate climate in this region give our hard maple trees one of the best habitats in the world to produce high quality sap which we harvest and boil into pure maple syrup every spring

To make one gallon of pure maple syrup we boiled down between 45-60 gallons of raw maple sap

After the syrup has been deemed worthy of aging we procure freshly emptied white oak bourbon casks and age our pure maple syrup for 6-8 months to ensure a full bodied bourbon infusion
